spotlight on spinach

we have our eye on spinach for #MeatlessMonday!  it’s one of my GASP items. 🙂 (you know, those foods I literally GASP over) and  if you’re looking to add more greens to your diet, spinach is a great option, it’s low in calories, high in vitamins, and is an excellent source of multiple nutrients including fiber, calcium and protein.
