as the saying goes, when you have lemons – make lemonade. and I’m taking that literally. 😉 we grew some fresh mint this year and used it to make the best lemonade. surprisingly, it was even more refreshing on a cold night (it made us immediately want summer). so when you have lemons, make this – it’s a different spin on a classic drink. enjoy!
ingredients:
- 10 lemons
- 3 bunches of fresh mint
- 1.5 cups brown sugar
- 1 cup of hot water
instructions:
1. squeeze juice out of lemons
2. grind up fresh mint with a little water (just enough to liquefy the mint) in your vita mixer or food processor. then take a cheese cloth and strain liquid out, so pieces of mint will not wind up in your lemonade.
3. then dissolve brown sugar in 1 cup in hot water (not boiling)
4. using a large pitcher, mix fresh squeezed lemon juice and mint liquid and brown sugar mixture. then add water to make a gallon. you can consume immediately over ice or let it sit overnight (the flavor is better).
