chocolate hazelnut granola bars.

sometimes I crave granola, and today was just one of those days.  I wanted something very easy and quick, and I found it with Martha Stewart’s peanut butter granola bars.  I made just a few changes to the original recipe (swapping peanut butter for chocolate hazelnut butter for one) but it filled my need for granola 😀.  so try this the next time you want a good granola bar, and let me know what you think! what’s your favorite granola recipe?

chocolate hazelnut granola bars just slightly tweaked from martha stewart penaut butter granola bars

ingredients:

  • 1/2 cup old-fashioned oats
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/4 teaspoon salt
  • 1/2 cup justin’s chocolate hazelnut butter*
  • 1/4 cup dark brown sugar
  • 3 tablespoons canola oil (or other neutral oil)
  • 1/2 teaspoon ground cinnamon
  • 1 large egg white

instructions:

  1. preheat oven to 300 degrees. line an 8-inch square baking pan with 2 crisscrossed rectangles of parchment paper, leaving a 2-inch overhang at 2 opposite ends. in a large bowl, combine oats, almonds and cranberries.

  2. in a small saucepan, whisk together oil, brown sugar, chocolate hazelnut butter, cinnamon, salt and 1 tablespoon water over low heat until sugar has dissolved, about 5 minutes. let cool slightly; whisk in egg white.  pour over oat mixture; stir until moistened. spread evenly in bottom of pan; smooth top.

bake until top is firm, about 30 minutes. let cool 10 minutes. lift out of pan, using paper as handles. let cool completely, cut into bars with serrated knife.

*I really like that Justin’s doesn’t have a lot of sugar but still tastes delectable.
