gluten free potato cups with Charlie.

these potato cups pack a lot of flavor in a small bite.  I actually enjoyed them as a side dish just for me, but they  would be a great appetizer if you made them right before they had to be served.   I made 5 of these potato cups with just one potato (and only 4 were photographed, because I consumed one immediately  🙂 ) and they also happen to be gluten free!

now these potato cups are so flavorful because of “Charlie’s Spicy Seasoning Blend”  – a new all purpose seasoning that I’ve been putting on everything.   now for full disclosure, I am personally involved with the developers of this seasoning and have a vested interest in its success. but all that being said, it truly is a great all natural seasoning to have on hand.  it enhances everything from veggies-to meat-to chicken-to fish and even tofu. 😉  and for one day only, purchase it today (Fri 12/16/2016) as a part of #FreeShippingDay and get it before Christmas Eve. enjoy the recipe and hope you get some Charlie’s too!

potato cups with Charlie

serves: 1

ingredients:

1/2 small onion

1 medium potato (approx 180 grams)

1 egg

1-2 Tbsp. gluten free breadcrumbs

green onions (optional)

season with  Charlie’s Spicy Seasoning Blend

directions:

preheat oven to 400 degrees.

mince onion or shred on box grater and set in a bowl.

peel and shred potato on box grater and then place potatoes in cheesecloth or towel and squeeze out as much of the water as possible (this helps potatoes crisp up and not get soggy, you’d be surprised how much water is in one potato!)  place potato in bowl with grated onion.

beat 1 egg and add to bowl along with gluten free breadcrumbs (feel free to add more breadcrumbs if you’d like) and add some chopped green onions (I added for color).

mix until combined.  (it should hold together easily when put in your hand and not be too wet)

season with Charlie’s Spicy Seasoning Blend. 

spray or grease a few muffin tins (I needed 5 in total) and take a portion of the seasoned potato mixture in your hand and start working the mixture into your muffin cups, working it up on the sides and even a little on the top, (it’ll shrink so don’t worry) – making sure that the bottom base is covered (try not to have any gaps because it’ll be too thin – but also don’t make it so thick that it takes longer to cook). 

bake for 20-25 minutes until golden brown on the sides and cooked through completely.

garnish with sour cream, chives, smoked salmon or anything else you like.  Enjoy!
